Sparkling Wines

When Hermann Thumm begun Yaldara Estate in 1947, he brought a lifetime of European winemaking techniques and knowledge to the rolling valleys of the Barossa.

One technique most notably, was Méthode Traditionnelle, the process of making Champagne. As early as the mid-20th century, the winery was already crafting refined sparkling wines using this method, a rarity in the Southern Hemisphere at the time. Sourcing premium fruit from the Barossa and its higher-altitude, cooler sub-regions, and combining the precision of German and French winemaking heritage, Chateau Yaldara’s sparkling wines are known for their fine, persistent bubbles, pure fruit expression, and complex notes of brioche and roasted nuts. After decades of refinement, the winery continues to uphold the artisanal practices of hand riddling and extended lees ageing.

Today, its sparkling range continues to receive critical acclaim and high scores.

Méthode Traditionnelle

The delicate beads enhance the citrus and white peach notes with highlights of strawberry blossom and lemon zest.

Ageing on yeast lees for a minimum of 18 months had created complex dough and biscuit richness on the palate, beautifully balanced with a clean acid line that refreshes the senses.
