Fortified Wines

 

Chateau Yaldara, like many Barossa wineries, has a rich history with fortified wine making. Formerly known as Port, fortified wines has been monumental in the early days of Australian winemaking. With European immigrants bringing their knowledge across the world, they were faced with a challenging climate. Their understanding of fortified wines' ability to cellar in various climates led early winemakers to hone their craft.

Generations later, we are home to some of the finest Tawny Fortified Wines, enjoyed by countless people over the years.

We follow traditional fortified winemaking: using South Australian grapes such as Shiraz, Grenache and Mataro, we add a 77% grape spirit partway through fermentation to keep natural grape sweetness, then age for years in oak so gentle oxidation builds depth and rich aroma. Over time, a little water evaporates and the flavours concentrate, showing notes of toffee, nuts and dried fruit. With large old stocks and careful craftsmanship, every bottle of Yaldara Tawny captures time and skill, making it a fine choice for cellaring and tasting.

 

Classic Tawny

 

The bouquet has burnt brown sugar and spice. The extended barrel maturation has added extra layers of roasted nuts. Orange rind and caramel meld into the silky mouthfeel, the finish is sweet and intense with complex floral and toffee flavour.

 

20 Year Old Tawny

 

The extended barrel maturation has added extra layers of roasted nuts and nutmeg to the dried fruit and molasses characters with floral hints and well integrated spirit adding viscosity to the mouthfeel. The finish of the wine is sweet and intense with some complexing floral and toffee flavours.

 

20 Year Old Muscat

 

A mid amber-green colouring, with intense lifted muscat floral and rose petal nose. It holds complex and deep aged characters such as toffee, butterscotch and spice. A beautifully balanced seamless luscious palate with a hint of citrus peel leading to a finish of great intensity and length.

 

30 Year Old Tawny

 

Dried stone fruits and burnt toffee notes are evident with honey and ginger notes. The wine has amazing length of sweetness and balanced acidity with highlighted floral spirit undertones. The bouquet has notes of fruit cake, golden syrup and liquored sultanas.

 

 

 

40 Year Old Tawny

 

The extended barrel maturation has intensified the grape flavours and created an intensely viscous and silky mouthfeel. Dried stone fruits and spiced caramel notes are evident with molasses and roasted almonds. The wine has amazing length of sweetness with balanced acidity, and warming finish from the highlighted spirit.
